The microformats wiki has the fullest information and its free, but its also can be dense and hard to find just what you want. Emily's book is an easy read if you and a good reference for examples. Horse for course, I use the wiki and sometimes the book

so, the OSM website tries hard to not make assumptions about the tags used. there's only a few hard-coded tag.
